Fast Food ketens
Daarmee begon de ontwikkeling. Ketens. Niet enkel hamburgers hoor.
Uhh, hieronder nogal een opsomming, maar het hoort erbij...
Zie voor de tijdlijn in al deze ontwikkelingen het laatste stukje in deze post. Lees eerst over de onderdelen, en aan het einde hoe ze in de tijd in het gareel staan.
Tegelijkertijd met de ketens ontstond het franchise concept. En niet alleen dat. Concerns die franchise aanboden, bieden, naast dat je franchisee wordt, ook aan dat je lokaal franchiser wordt. Wee Willie Fish and Chips.
En: de friet werd populair.
Wee Willie, Shoney's (bowling en snacks), Kentucky Fried Chicken, Denny's (coffeeshops), Stuckey's (café en pompstation)...
Hamburger places
Dat ging daarna booming.
Het begon met ketens als Steak 'n Shake, en daarna zag je overal de tenten verschijnen voor hamburger, friet en shake. De grondlegger: White Castle. Tenten dus in de vorm van witte kasteeltjes. En imitatie natuurlijk.
"Drive-thru".
Jack in the Box, McDonald's (1955), Burger Chef, Hardee's, Hamburger Hamlet, Wendy's, Burger King (1954)...

In de stad gecombineerd met zuivelwinkels, langs de weg al of niet als drive-ins.
Opkomst van de ijs-wagen die door de stad rijdt.

Dat is het laatste hoofdstuk.
Heel aardig. Het hele verhaal van de fast food ontwikkeling lokaal bezien.
Een van de auteurs maakte het in Springfield deels aan den lijve mee.
Duidelijk wordt dat je tenten hebt waar je eet omdat je móet eten, en tenten waar je eet omdat je "uit gaat".
"Eating out was, perhaps, a necessary evil of low social status implication"
"How did eating out develop along the streets in, and the highways to and from a specific city?"
1899: street vendors, tamales and chili, garnished with crackers
And at the upper hand of the restaurant scale ranked the Leland Hotel
Route 4 tying Chicago and St. Louis was the one significant road.
"In 1935, intracity restaurant locations reflected both the traditional pedestrian city and the emerging landscape of automobile convenience"
1935: "The professional and managerial classes still preferred eating at home most of the time."
Mid 1930s: hamburger places.
Steak 'n Shake
"Mom-and-pop" operations yet reigned, but automobile convenience was relocating many of them.
1955 Beer and Food places

"From the late 1970s through the mid-1990s, Springfield's restaurant typically was reaffirmed in a series of characterizations. "Its all meat and potatoes!"
