Pizza

In de 19e eeuw Italiaanse bakkers die in Amerika Italiaans brood maakten.
En ze maakten ook flatbread. Die uit het noorden van Italië Focaccia, die uit het zuiden Pizza ("pizza pie", "tomato pie").

"After the Great Depression many Americans were eating pizza in Italian restaurants and pizzerias on the East and West Coasts."

1936, fund raising cookbook, Boston, met het eerste pizza recept: "137 Tested Recipes of Famous Italian Foods". Pizza alla Napolitana. Deeg, z/p. Scamorza, tomaat, Parmezaan, olijfolie "in that order" (gaan we maken!). "The dough can be purchased at any Italian bake shop."

Daarna de East Coast oftewel de New York pizza. Dunne bodem, weinig verschillende zaken er op. Tomaat, Mozzarella, basilicum iha.
En kijk, wat ik al jaren loop te roepen, zo hoort het: "After baking, the thin crust should not be too crisp; it should be flexible so that a piece of pizza [een halve] can be folded [en uit de hand gegeten]".

West Coast: thick-, ook wel double-crust pizza (hier de "American pizza"). Verschillende soorten vlees, idem groente (artisjok, courget, paddo's, olijven, ui) met een pikante tomatensaus en twee of drie soorten kaas.

Deep-dish oftewel Chicago style pizza.
Twee inch diep. Tomaat, mozzarella,worst.

Stuffed pizza.
Bodem als Chicago, spinazie, Mozzarella, Parmezaan; tweede dunne deeglaag erop, tomatensaus.

California of Gourmet of Chez Panisse pizza.
Dun deeg, weinig maar verse ingrediënten, niet-Italiaanse kazen, meestal geen tomaat.

Herb and spice mixtures

"Curry powder and Hot Madras Curry powder (which contains aditional chili) are rarely used in India, and are made for export to Europe and the United States."

"Old Bay Seasoning, used with shellfish, especially crabs, around Chesapeake Bay, was invented in Baltimore in 1939 by Gustav Brunn. Its primary ingredient is celery salt, but the mixture includes many other spices - allspice, bay leaves, cardamom, cinnamon, cloves, chili, ginger, mace, mustard, paprika  and black pepper."

"Pumpkin Pie spice was commonly called mixed spice in old English cookbooks. Typical blend contains allspice, cinnamon, cloves, ginger, nutmeg, and sometimes cassia and coriander."


BBQ

"Barbecue comes in three general regional styles, known as Southern, Kansas City and Texas, which are distinguished by the use of rubs, sauces, and cooking methods."

Salami

"Kosher salami is made from kosher ingredients under rabbinical supervision."

"At the beginning of the twentieth century, the immigrants idfentified the temperate climate of northern California as best suited for dry-curing salami. San Francisco is regarded as the salami capital of America."


Kosher salt

Soort 1: gewoon grof zeezout, kosher salt. "Kosher"? ja, want het wordt gebruikt om vlees kosher te maken. Inwrijven met zout = bloed verwijderen.

Soort 2: koshering salt. Wat betere soort. Meer fleur de sel-achtig.
"Kosher salt has a coarse flake texture".

Soort 3: Kosher certified salt. Echt kosher, =  "under rabbinical supervision" geproduceerd.

Men had de voorkeur voor zout uit "brine springs", zoute bronnen, omdat in de zee beesten zwemmen die ze niet mogen eten (over de grond kruipend, geen schubben hebbend...)


Sloppy Joe

Zou dat niet net zo'n effect zijn als dat slappe van die friet van Kapsalon?

"The all-american sloppy-joe sandwich [zie hier] is typically composed of ground beef, with chopped onions, green pepper, and garlic, combined with tomato sauce and seasonings of choice; and served hot on a hamburger bun. Although it is not known when the sandwich was first called the 'sloppy joe', similar ground beef concoctions have been recorded in American cookbooks since the beginning of the twentieth century."
